    Prepare the Garlic

    Preheat your oven to 400°F (200°C). Take the garlic cloves and slice off the tops to expose the insides. Drizzle with olive oil and wrap them in aluminum foil. Place them in the oven to roast for about 30-35 minutes until tender and caramelized.

    Cook the Potatoes

    While the garlic is roasting, peel and chop the Russet potatoes into even chunks. Place the potatoes in a large pot, cover with cold water, and add 1 tsp of salt. Bring to a boil and then reduce to a simmer. Cook for about 20 minutes or until the potatoes are fork-tender.

    Drain and Mash the Potatoes

    Once the potatoes are cooked, drain them in a colander. Transfer the potatoes back to the pot and allow them to steam for a few minutes to remove excess moisture. Mash the potatoes using a potato masher or ricer until smooth.

    Add Butter and Cream

    Remove the roasted garlic from the oven and squeeze the cloves out of their skins into the mashed potatoes. Add the unsalted butter and heavy cream to the potatoes. Stir until the butter is melted and everything is well combined.

    Season and Serve

    Season the mashed potatoes with additional salt and black pepper to taste. Finally, sprinkle chopped chives on top for garnish. Serve warm.
