    Prepare the Ingredients

    Rinse the fresh prawns under cold running water to remove any dirt or debris. Pat them dry with paper towels.

    Boil the Water

    In a large pot, add 2 liters of water, 2 teaspoons of salt, and 1 tablespoon of Old Bay seasoning. Bring the water to a rolling boil over high heat.

    Add Aromatics

    While the water is heating, slice the lemon in half and crush the garlic cloves. Once the water is boiling, add the lemon halves and crushed garlic to the pot.

    Cook the Prawns

    Carefully add the rinsed prawns to the boiling water. Allow them to cook for about 2-3 minutes or until they turn pink and opaque.

    Prepare the Ice Bath

    While the prawns are cooking, fill a large bowl with ice and cold water. This will stop the cooking process once the prawns are done.

    Shock the Prawns

    Once the prawns are cooked, use a slotted spoon to transfer them into the ice bath. Let them sit for a few minutes until completely cool.

    Serve

    Remove the prawns from the ice bath, drain, and serve them on a platter. You can serve them with extra lemon wedges and your favorite dipping sauce.
