Mashing the Grains
In a large mash tun, combine 6 cups of pale malt and 1 cup of caramel malt with 3 gallons of heated water at 165°F (74°C). Stir well and let it rest for 60 minutes to convert the starches into fermentable sugars.

Sparging
After mashing, sparge (rinse) the grain bed with 170°F (77°C) water to collect enough wort, around 6 gallons in total.

Boiling the Wort
Bring the collected wort to a boil. Once boiling, add 1 oz of Cascade hops and boil for 60 minutes.

Adding Flavor Hops
With 15 minutes left in the boil, add 1 oz of Citra hops for aroma and flavor.

Cooling the Wort
After the boil is complete, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Fermentation
Transfer the cooled wort to a sanitized fermentation vessel, pitch in the yeast, and seal with an airlock. Allow it to ferment at around 68°F (20°C) for 1-2 weeks.

Bottling
After fermentation is complete, dissolve 3 oz of priming sugar in a small amount of boiling water to create a simple syrup. Add this to the beer before bottling to carbonate. Bottle the beer and cap each bottle.

Conditioning
