    In a large mixing bowl, combine the cornmeal, all-purpose flour, baking powder, salt, black pepper, and paprika. Whisk together until well combined.

    Prepare the Wet Mixture

    In another bowl, beat the eggs and then add the milk. Mix together until fully combined.

    Coat the Catfish

    Dip each catfish fillet first into the wet mixture, allowing any excess to drip off, then dredge it in the cornmeal mixture, ensuring it is fully coated. Place the breaded fillets on a plate and let them sit for 10 minutes.

    Heat the Oil

    In a large skillet or frying pan, heat the vegetable oil over medium-high heat. To test if the oil is ready, drop a small piece of the breading into the oil; if it bubbles and sizzles, it’s ready.

    Fry the Catfish

    Carefully place the breaded catfish fillets in the hot oil, ensuring not to overcrowd the pan. Fry for about 4-5 minutes on each side or until golden brown and cooked through.

    Once cooked, remove the catfish from the oil and place them on a plate lined with paper towels to drain excess oil. Serve immediately with French fries on the side.
