    Prepare Ingredients

    Chop the Andouille sausage, chicken thighs, bell pepper, onion, celery, and slice the okra. Mince the garlic and set all ingredients aside.

    Cook Sausage and Chicken

    In a large pot, heat olive oil over medium heat. Add the Andouille sausage and cook until browned, about 5 minutes. Then add the chicken thighs and cook until they are no longer pink, about 7-10 minutes.

    Add Vegetables

    Stir in the diced bell pepper, onion, celery, and garlic. Cook for an additional 5 minutes until the vegetables begin to soften.

    Add Liquids and Seasonings

    Add the canned diced tomatoes, chicken broth, sliced okra, Cajun seasoning, bay leaves, salt, and black pepper to the pot. Stir well to combine.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30-40 minutes, stirring occasionally.

    Add Shrimp

    Add the shrimp in the last 5 minutes of cooking, allowing them to turn pink and cook through.

    Remove bay leaves and serve the gumbo over cooked rice.

Caesar Salad

    Prepare Lettuce

    Wash and chop the Romaine lettuce into bite-sized pieces. Place it in a large salad bowl.

    Sprinkle the grated Parmesan cheese and croutons over the lettuce.

    Dress the Salad

    Drizzle Caesar dressing and lemon juice over the salad. Add garlic powder and black pepper to taste.
