    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut each potato into thin strips, about 1/4 inch thick. Rinse the cut potatoes under cold water to remove excess starch.

    Soak the Potatoes

    Place the cut potatoes in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove more starch and makes for crispier fries.

    Heat the Oil

    In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels. This step is crucial to avoid oil splatters and ensure crispiness.

    Fry the Potatoes (First Fry)

    Carefully add a batch of the dried potato strips to the hot oil, making sure not to overcrowd the pot. Fry for about 5-6 minutes, or until the potatoes are soft but not browned. Remove them from the oil and drain on paper towels.

    Fry the Potatoes (Second Fry)

    Increase the oil temperature to 375°F (190°C). Once hot, add the first batch of fries back into the oil and fry for an additional 3-4 minutes, or until golden brown and crispy. Remove and drain on paper towels.

    While the fries are still hot, sprinkle them with salt, black pepper, garlic powder, and paprika to taste. Toss gently to coat.
