    Prepare the Mussels

    Rinse the mussels under cold water, scrubbing the shells with a brush to remove any dirt. Discard any mussels that are cracked or open and do not close when tapped.

    Chop the Aromatics

    Finely chop the shallots and garlic. Roughly chop the fresh parsley, and remove the leaves from the thyme stems.

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped shallots and garlic, and sauté for about 3-4 minutes until softened and fragrant.

    Add Wine and Herbs

    Pour in the white wine and add the fresh thyme and black pepper. Bring the mixture to a simmer.

    Cook the Mussels

    Add the cleaned mussels to the pot. Cover the pot with a lid and let the mussels steam for about 5-7 minutes, or until they open up. Discard any mussels that remain closed.

    Once the mussels are cooked, stir in the chopped parsley and squeeze the juice of the lemon over the mussels. Serve immediately.
