    Rinse the catfish fillets under cold water and pat them dry with paper towels. Place them in a shallow dish.

    Marinate in Buttermilk

    Pour the buttermilk over the catfish fillets, ensuring each piece is well-coated. Cover and refrigerate for at least 30 minutes to marinate.

    In a separate bowl, combine the cornmeal, flour, paprika, garlic powder, onion powder, salt, and black pepper. Mix well to combine.

    Coat the Catfish

    After marinating, remove the catfish fillets from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, ensuring they are well-coated.

    In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the cornmeal mixture into it; if it sizzles, it's ready.
