Cooking Instructions
- 1
Prepare the Catfish
Rinse the catfish fillets under cold water and pat them dry with paper towels. Place them in a shallow dish.
- 2
Marinate in Buttermilk
Pour the buttermilk over the catfish fillets, ensuring each piece is well-coated. Cover and refrigerate for at least 30 minutes to marinate.
- 3
Mix Dry Ingredients
In a separate bowl, combine the cornmeal, flour, paprika, garlic powder, onion powder, salt, and black pepper. Mix well to combine.
- 4
Coat the Catfish
After marinating, remove the catfish fillets from the buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture, ensuring they are well-coated.
- 5
Heat the Oil
In a large skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the cornmeal mixture into it; if it sizzles, it's ready.
- 6
Fry the Catfish
Carefully add the coated catfish fillets to the hot oil, frying in batches if necessary to avoid overcrowding. Fry for about 4-5 minutes on each side, or until golden brown and cooked through.
- 7
Drain and Serve
Once fried, transfer the catfish to a paper towel-lined plate to drain excess oil. Serve hot with your choice of sides.
