Cooking Instructions

  1. 1

    Prepare the Ingredients

Rinse the red beans under cold water and soak them overnight in a large bowl. If you're using canned beans, skip this step. Chop the onion, green bell pepper, celery, and garlic, and set aside.

  2. 2

    Cook the Sausage

In a large pot, heat the olive oil over medium heat. Add the andouille sausage, sliced into rounds, and cook until they are browned, about 5 minutes. Remove the sausage and set aside.

  3. 3

    Sauté the Vegetables

In the same pot, add the diced onion, green bell pepper, celery, and minced garlic. Sauté for about 5-7 minutes, or until the vegetables are softened.

  4. 4

    Combine Ingredients

Add the soaked and drained red beans (or canned beans), chicken broth, bay leaves, cayenne pepper, salt, and black pepper to the pot. Stir well to combine.

  5. 5

    Simmer

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1 to 1.5 hours, or until the beans are tender. If using canned beans, reduce the simmer time to about 20-30 minutes.

  6. 6

    Cook the Rice

While the beans are simmering, cook the long-grain white rice according to package instructions.

  7. 7

    Finish the Dish

Once the beans are tender, stir in the cooked sausage. Adjust seasoning if necessary. Serve the red beans over a bed of rice and sprinkle with cheddar cheese if desired.
