Prepare the Ingredients
Rinse the red beans under cold water and soak them overnight in a large bowl. If you're using canned beans, skip this step. Chop the onion, green bell pepper, celery, and garlic, and set aside.

Combine Ingredients
Add the soaked and drained red beans (or canned beans), chicken broth, bay leaves, cayenne pepper, salt, and black pepper to the pot. Stir well to combine.

Simmer
Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 1 to 1.5 hours, or until the beans are tender. If using canned beans, reduce the simmer time to about 20-30 minutes.

Cook the Rice
While the beans are simmering, cook the long-grain white rice according to package instructions.

Once the beans are tender, stir in the cooked sausage. Adjust seasoning if necessary. Serve the red beans over a bed of rice and sprinkle with cheddar cheese if desired.
