Directions

  1. 1

    Prepare the Marinade

In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and black pepper. This will be used to marinate the halibut.

  2. 2

    Marinate the Halibut

Place the halibut fillets in a shallow dish and pour the marinade over them. Ensure each fillet is well coated. Cover and refrigerate for at least 30 minutes.

  3. 3

    Prepare the Vegetables

While the halibut is marinating, wash and chop seasonal vegetables into bite-sized pieces. Toss them with a little olive oil, salt, and black pepper.

  4. 4

    Grill the Vegetables

Preheat the grill to medium-high heat. Place the seasoned vegetables on the grill and cook for about 5-7 minutes, turning occasionally, until tender and slightly charred. Remove from the grill and keep warm.

  5. 5

    Grill the Halibut

Remove the halibut from the marinade and place it on the hot grill. Grill for about 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork. Avoid overcooking.

  6. 6

    Prepare the Avocado

While the halibut is grilling, slice the avocados in half, remove the pit, and scoop out the flesh. Cut into thin slices or cubes.

  7. 7

    Assemble the Dish

Once the halibut is grilled, place each fillet on a plate. Top with fresh crab meat and avocado slices. Drizzle with red chili vinaigrette.

  8. 8

    Serve

Arrange the grilled seasonal vegetables alongside the halibut on each plate. Serve immediately.
