Fried Chicken Tenders

    Prepare the Chicken

    In a large bowl, combine the buttermilk, cayenne pepper, paprika, salt, black pepper, and garlic powder. Add the chicken tenders and marinate for at least 30 minutes, or up to overnight in the refrigerator.

    Dredge the Chicken

    In a separate bowl, place the flour. Remove the chicken tenders from the marinade, allowing excess to drip off, and dredge in the flour until fully coated.

    Fry the Chicken

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the chicken tenders in batches, cooking until golden brown and cooked through, about 5-7 minutes per side. Remove and drain on paper towels.

Roasted Garlic Mashed Potatoes

    Boil the Potatoes

    Peel and chop the russet potatoes into large chunks. Place in a large pot and cover with cold water. Add salt and bring to a boil over high heat. Cook until potatoes are fork-tender, about 15-20 minutes.

    Roast the Garlic

    While the potatoes are boiling, preheat the oven to 400°F (200°C). Wrap the garlic cloves in aluminum foil with a drizzle of olive oil and roast for 30 minutes until tender.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add the roasted garlic, butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Real Cream Gravy

    Make the Roux

    In the same skillet used for frying the chicken, leave the drippings and sprinkle in the flour. Cook over medium heat, stirring continuously, for about 2 minutes until the flour is lightly browned.

    Add Broth

    Slowly whisk in the chicken broth until smooth. Bring to a simmer and cook until thickened, about 5-7 minutes.

    Season the Gravy

    Season the gravy with salt and black pepper to taste. Serve hot over the chicken tenders and mashed potatoes.
