    Prepare the Marinade

    In a medium bowl, mix together olive oil, red chili powder, garlic powder, cumin, salt, black pepper, and lime juice until well combined.

    Marinate the Redfish

    Place the redfish fillets in a shallow dish and pour the marinade over the fish, ensuring that all sides are coated. Cover and refrigerate for at least 30 minutes to allow the flavors to penetrate.

    Prepare the Grill

    Preheat your grill to medium-high heat. Ensure the grill grates are clean and lightly oiled to prevent sticking.

    Grill the Redfish

    Once the grill is hot, place the marinated redfish fillets on the grill. Cook for about 4-5 minutes on each side, or until the fish is opaque and flakes easily with a fork.

    Grill the Vegetables

    While the fish is cooking, toss the mixed vegetables in a little olive oil, salt, and pepper. Grill them alongside the fish for about 5-7 minutes, turning occasionally until tender.

    Serve

    Remove the grilled fish and vegetables from the grill. Serve the redfish with guacamole and pico de gallo on the side.
