Roast the Tomatoes
Preheat your oven to 200°C (400°F). Place the cherry tomatoes on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and black pepper. Roast in the oven for 15-20 minutes until they are blistered and caramelized.

Cook the Tortelloni
While the tomatoes are roasting, bring a large pot of salted water to a boil. Add the cheese tortelloni and cook according to package instructions, usually about 3-5 minutes. Once cooked, drain and set aside.

Sauté the Spinach
In a large skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the fresh spinach and cook until wilted, about 2-3 minutes.

Combine Ingredients
Add the cooked tortelloni to the skillet with the spinach. Toss gently to combine. Add the roasted tomatoes, balsamic vinegar, and grated parmesan cheese. Toss again, and season with additional salt and pepper to taste.

Serve the Tuscan Tortelloni warm, garnished with extra parmesan cheese if desired.
