Lobster Bisque Preparation

    Prepare the Lobster

    In a large pot, melt 2 tablespoons of butter over medium heat. Add the lobster tails and cook until they turn bright red, about 5-7 minutes. Remove the lobster tails, let cool, and then remove the meat from the shells. Chop the lobster meat into bite-sized pieces and set aside. Reserve the shells.

    Sauté the Vegetables

    In the same pot, add the remaining butter. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are soft. Stir in the minced garlic and tomato paste, cooking for an additional 2 minutes.

    Deglaze the Pot

    Pour in the white wine and bring to a boil, scraping up any browned bits from the bottom of the pot. Reduce the heat and let simmer for about 5 minutes.

    Add Liquids and Seasonings

    Add the seafood stock, reserved lobster shells, salt, black pepper, thyme, and bay leaf. Bring to a simmer and let cook for 30 minutes.

    Blend the Soup

    Remove the lobster shells and bay leaf from the pot. Using an immersion blender, blend the soup until smooth. Stir in the heavy cream and add the chopped lobster meat. Heat through.

    Serve

    Ladle the bisque into bowls and garnish with chopped fresh parsley. Enjoy your delicious lobster bisque!
