Preparation and Cooking

    Prepare the Ribeye

    Take the ribeye steak out of the refrigerator and let it come to room temperature for about 30 minutes.

    Season the Steak

    Rub the steak with olive oil, then season it generously with salt, black pepper, garlic powder, and fresh rosemary.

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Potatoes

    Wash the potatoes and cut them in half. Toss them in olive oil, salt, and pepper, then spread them on a baking sheet.

    Roast the Potatoes

    Place the baking sheet in the preheated oven and roast the potatoes for about 20 minutes.

    Prepare the Asparagus

    Trim the ends of the asparagus and toss them in olive oil, salt, and pepper.

    Cook the Steak

    Heat a cast-iron skillet over medium-high heat. Add a tablespoon of butter. Once melted, add the ribeye steak and sear for 4-5 minutes on each side for medium-rare.

    Finish Cooking

    After searing, transfer the skillet to the oven alongside the potatoes and cook for an additional 5-10 minutes depending on your preferred doneness.

    Add Asparagus

    In the last 5 minutes of cooking, add the asparagus to the baking sheet with the potatoes.

    Resting the Steak

    Once cooked to your liking, remove the steak from the oven and let it rest for 5-10 minutes before slicing.

    Slice the ribeye and serve it with roasted potatoes, asparagus, and a squeeze of lemon juice.
