Make the Pasta
In a large mixing bowl, combine flour and salt. Create a well in the center, then add the eggs. Mix until a dough forms. Knead for about 5-7 minutes until smooth. Wrap in plastic and let rest for 30 minutes.

Prepare the Filling
In a medium bowl, mix together ricotta, half of the mozzarella, half of the parmesan, chopped basil, salt, and pepper until well combined.

Roll the Pasta
On a floured surface, roll out the rested dough to about 1/16 inch thickness. Cut into rectangles about 3x5 inches.

Assemble the Manicotti
Preheat your oven to 375°F (190°C). Fill each pasta rectangle with the ricotta mixture, then roll them up and place seam side down in a baking dish. Pour pomodoro sauce over the top and sprinkle with remaining mozzarella and parmesan.
