Lobster Ravioli
Method
Preparation
- 1
Make the Ravioli Dough
In a large mixing bowl, combine the flour and salt. Create a well in the center and add the egg and olive oil. Gradually mix in flour until a dough forms. Knead for 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
- 2
Prepare the Filling
In another bowl, mix together the chopped lobster meat, ricotta cheese, fresh basil, salt, and black pepper until well combined.
- 3
Roll Out the Dough
Divide the dough into four pieces. Roll out each piece into thin sheets using a pasta machine or a rolling pin, dusting with flour as needed to prevent sticking.
- 4
Fill the Ravioli
Place small spoonfuls of the lobster filling about 2 inches apart on one sheet of dough. Moisten the edges with water, then place another sheet of dough on top. Press around the filling to seal and cut out the ravioli shapes.
- 5
Cook the Ravioli
Bring a large pot of salted water to a boil. Add the ravioli and cook for 3-4 minutes until they float. Remove with a slotted spoon and set aside.
- 6
Prepare the Vodka Sauce
In a large skillet over medium heat, add vodka and let it simmer for 2-3 minutes to reduce slightly. Stir in heavy cream, crushed red pepper flakes, and grated Parmesan cheese. Cook for another 5 minutes until the sauce thickens. Season with salt and black pepper to taste.
- 7
Combine and Serve
Gently toss the cooked ravioli in the vodka sauce. Serve hot, garnished with fresh parsley.
