    Make the Base

    In a saucepan, combine whole milk, heavy cream, and granulated sugar over medium heat. Stir until the sugar dissolves and the mixture is warm, but not boiling.

    Combine Egg Yolks

    In a separate bowl, whisk together the egg yolks. Slowly pour in a small amount of the warm milk mixture while whisking constantly to temper the yolks.

    Thicken the Mixture

    Pour the tempered egg yolk mixture back into the saucepan. Continue to cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon (about 5-7 minutes). Do not let it boil.

    Add Flavors

    Remove from heat. For vanilla gelato, stir in vanilla extract. For chocolate gelato, add cocoa powder and whisk until smooth.

    Chill the Mixture

    Transfer the mixture to a bowl, cover with plastic wrap, and refrigerate for at least 4 hours or overnight until completely chilled.

    Churn the Gelato

    Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.

    Freeze

    Transfer the gelato to an airtight container and freeze for at least 2 hours to firm up before serving.
