Fettuccine Alfredo Ingredients
Method
Fettuccine Alfredo Directions
- 1
Make the Fettuccine
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and crack the eggs into it. Using a fork, gradually incorporate the flour into the eggs until a dough begins to form. Knead the dough on a floured surface for about 8-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.
- 2
Roll and Cut the Pasta
After resting, divide the dough into four pieces. Roll out one piece at a time using a pasta machine or a rolling pin until it reaches your desired thickness. Cut the sheet into fettuccine strips. Repeat with the remaining dough.
- 3
Cook the Fettuccine
Bring a large pot of salted water to a boil. Add the fettuccine and cook for 3-4 minutes or until al dente. Reserve 1 cup of pasta water, then drain the rest.
- 4
Prepare the Alfredo Sauce
In a large skillet over medium heat, melt the butter. Add the heavy cream and bring to a simmer. Stir in the grated Parmesan cheese and black pepper, cooking until the cheese has melted and the sauce is smooth.
- 5
Combine Pasta with Sauce
Add the cooked fettuccine to the Alfredo sauce, tossing to coat the pasta. If the sauce is too thick, add reserved pasta water a little at a time until the desired consistency is reached.
- 6
Serve
Garnish with chopped parsley and additional grated Parmesan cheese if desired. Serve immediately.
