Prepare the Protein
If using chicken breasts, slice them in half horizontally to create thin cutlets. If using veal, ensure they are thinly sliced.

Bread the Protein
Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with grated parmesan cheese. Season the flour with salt and pepper. Dip each piece of protein in flour, then egg, and finally coat with parmesan cheese.

Cook the Protein
In a large skillet, heat olive oil over medium heat. Add the breaded chicken or veal cutlets to the skillet and cook until golden brown, about 3-4 minutes per side. Remove from skillet and set aside.

Make the Lemon White Wine Sauce
In the same skillet, add butter and minced garlic. Sauté for 1-2 minutes until fragrant. Pour in the white wine and lemon juice, scraping any browned bits from the bottom of the skillet. Let the sauce simmer for about 5 minutes until slightly reduced.
