Prepare the Protein
Season the chicken or veal with salt and black pepper. Dredge each piece in all-purpose flour, shaking off the excess.

Sauté the Protein
In a large skillet over medium-high heat, heat 2 tablespoons of olive oil and 1 tablespoon of butter. Add the chicken or veal cutlets and sauté until golden brown, about 4-5 minutes per side. Remove from the skillet and set aside.

Cook the Mushrooms
In the same skillet, add the remaining 1 tablespoon of olive oil and the sliced mushrooms. Sauté until the mushrooms are browned and tender, about 5 minutes.

Make the Sauce
Pour in the Marsala wine and broth, scraping up any browned bits from the bottom of the pan. Bring to a simmer and let cook for about 5 minutes to reduce slightly.

Combine Everything
Return the chicken or veal to the skillet and cook for an additional 3-4 minutes until the protein is heated through and coated in the sauce.

Finish the Dish
Stir in the remaining tablespoon of butter and chopped parsley just before serving.
