Prepare the Protein
If using chicken, pound the chicken breasts to an even thickness. Season both sides with salt and pepper. If using salmon, simply season with salt and pepper.

Dredge in Flour
Place flour in a shallow dish. Dredge the chicken or salmon in flour, shaking off any excess.

Sauté the Protein
In a large skillet over medium-high heat, heat 2 tablespoons of olive oil and 1 tablespoon of butter. Add the chicken or salmon and cook for about 4-5 minutes per side, or until golden brown and cooked through. Remove from skillet and set aside.

Finish the Sauce
Stir in the lemon juice and chopped basil. Adjust seasoning with salt and pepper if needed.

Combine and Serve
Return the chicken or salmon to the skillet, spooning the sauce over the top. Cook for another minute to heat through. Serve immediately with extra sauce drizzled on top.
