    Cook the Rice

    In a pot, bring the vegetable broth to a boil. Add the Arborio rice, onion, garlic, salt, and pepper. Reduce heat to low and simmer, stirring occasionally, until the rice is tender and creamy, about 18-20 minutes. Remove from heat and let cool.

    Prepare the Filling

    Once the rice has cooled, mix in the grated Parmesan and diced mozzarella. Form the mixture into balls, about the size of a golf ball, and create a small indentation in the center of each ball. If desired, you can place a small piece of mozzarella inside each ball.

    Set Up Breading Station

    Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

    Bread the Arancini

    Roll each rice ball in flour, then dip it in the beaten eggs, and finally coat it with breadcrumbs. Ensure each ball is well coated.

    Fry the Arancini

    In a deep skillet or pot, heat olive oil over medium heat. Once hot, carefully add the breaded rice balls in batches. Fry until golden brown on all sides, about 4-5 minutes. Remove and drain on paper towels.

    Serve with Pomodoro Sauce

    Serve the arancini hot with a side of pomodoro sauce for dipping.
