Yuca Fries

    Prepare the Yuca

    Peel the yuca and cut it into thick sticks, about 1/2 inch wide.

    Boil the Yuca

    In a large pot, bring water to a boil. Add the yuca sticks and cook for about 15-20 minutes, or until just tender. Drain and let cool slightly.

    Fry the Yuca

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Fry the yuca sticks in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels. Sprinkle with salt and paprika.

Romesco Sauce

    Blend the Ingredients

    In a blender or food processor, combine roasted red peppers, almonds, garlic, olive oil, red wine vinegar, salt, and smoked paprika. Blend until smooth and creamy. Adjust seasoning to taste.

    Serve

    Shave or grate the manchego cheese over the hot yuca fries and serve with romesco sauce on the side.
