Prepare the Wings
Preheat your oven to 425°F (220°C). Rinse the chicken wings under cold water and pat them dry with paper towels.

Season the Wings
In a large bowl, combine the olive oil, Tajín seasoning, salt, and black pepper. Add the chicken wings to the bowl and toss until they are evenly coated with the seasoning mixture.

Bake the Wings
Place the seasoned wings on a baking sheet lined with parchment paper. Bake in the preheated oven for 40-45 minutes, flipping halfway through, until the wings are golden brown and crispy.
Chimichurri Sauce

Prepare the Chimichurri
While the wings are baking, prepare the chimichurri sauce. In a food processor, combine the parsley, cilantro, garlic, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper.

Blend the Sauce
Pulse the food processor until all the ingredients are finely chopped and well mixed. You can adjust the seasoning to taste if needed.

Serve
Once the wings are done baking, remove them from the oven and let them rest for a few minutes. Serve hot with the chimichurri sauce on the side for dipping.
