Preparation of Components

    Cook Rice

    In a medium pot, bring 2 cups of water to a boil. Add 1 cup of rice, reduce heat to low, cover, and let simmer for 18-20 minutes, or until all water is absorbed. Fluff with a fork and set aside.

    Prepare Black Beans

    If using canned black beans, rinse and drain them thoroughly. If using dried beans, soak them overnight and cook until tender. Set aside.

    Cook Corn

    If using fresh corn, slice kernels off the cob; if using frozen, heat in a microwave or on the stove until warmed through. Set aside.

    Make Guacamole

    In a bowl, mash 2 ripe avocados, add lime juice, chopped cilantro, diced onion, salt, and pepper to taste. Mix well and set aside.

    Prepare Pico de Gallo

    Combine diced tomatoes, chopped onion, chopped cilantro, lime juice, salt, and pepper in a bowl. Mix well and set aside.

Cooking the Egg

    Fry the Egg

    In a non-stick skillet over medium heat, add a small amount of oil. Crack the medium egg into the skillet and cook for about 4-5 minutes, or until the white is set, and the yolk is still runny. Season with salt and pepper to taste.

Assembly

    Assemble the Bowl

    In a large bowl, layer the cooked rice at the bottom, followed by black beans, corn, guacamole, pico de gallo, and tortilla strips on top. Drizzle with Au Jus Verde. Finally, place the fried egg on top of the assembled ingredients.
