    Prepare the Steak

    Remove the skirt steak from the refrigerator and let it come to room temperature for about 30 minutes. Pat dry with paper towels.

    Season the Steak

    Rub the steak with olive oil, then season generously with salt, black pepper, and garlic powder on both sides.

    Cook the Steak

    Heat a cast-iron skillet or grill pan over high heat. Once hot, add the steak and cook for 3-4 minutes on each side for medium-rare, or until your desired doneness. Remove from heat and let rest for 5 minutes before slicing.

Fries

    Prepare the Potatoes

    Peel the russet potatoes and cut them into thin strips for fries. Rinse the cut potatoes in cold water to remove excess starch and pat dry with a kitchen towel.

    Fry the Potatoes

    In a large, heavy pot, heat vegetable oil to 350°F (175°C). Carefully add the potato strips in batches, frying them for about 5-7 minutes or until golden brown and crispy. Remove with a slotted spoon and place on paper towels to drain. Season with salt immediately.

Mushroom Malbec Au Jus

    Sauté the Shallots and Mushrooms

    In a saucepan, melt the butter over medium heat. Add chopped shallots and cook until soft, about 2-3 minutes. Add sliced mushrooms and cook until they release their juices, about 5 minutes.

    Add Wine and Broth

    Pour in the Malbec wine and beef broth, then add thyme. Bring the mixture to a simmer and let it reduce for about 10-15 minutes, or until slightly thickened. Season with salt and black pepper to taste.
