Cooking Pasta

Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the spaghetti.
Preparing the Sauce

Cook the Pancetta
In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat and set aside.

Mix the Sauce Ingredients
In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.
Combining

Combine Pasta and Sauce
Return the drained spaghetti to the pot over low heat. Quickly pour the egg and cheese mixture over the spaghetti, tossing quickly to combine and prevent the eggs from scrambling. If the sauce is too thick, add reserved pasta water a little at a time until desired creaminess is achieved.

Season and Serve
Taste and season with salt as needed. Serve hot, garnished with chopped fresh parsley.
