Steak Preparation

    Season the Skirt Steak

    Sprinkle the skirt steak with salt and black pepper on both sides.

    Sear the Steak

    In a large skillet or grill pan, heat olive oil over medium-high heat. Add the skirt steak and sear for 3-4 minutes on each side for medium-rare, or until desired doneness is achieved.

    Rest the Steak

    Remove the steak from the heat and let it rest for 5-10 minutes before slicing.

Chimichurri Sauce Preparation

    Combine Ingredients

    In a food processor, combine fresh parsley, fresh oregano, garlic cloves, red wine vinegar, olive oil, crushed red pepper flakes, salt, and black pepper.

    Blend the Sauce

    Pulse until the mixture is finely chopped and well combined. Adjust seasoning to taste.

Serving

    Slice and Serve

    Slice the rested skirt steak against the grain. Serve with a generous drizzle of chimichurri sauce on top.

    Prepare the Side Dish

    If desired, roast potatoes seasoned with salt and olive oil in the oven at 425°F (220°C) for 25-30 minutes until golden and crispy.
