Method

Preparation

  1. 1

    Prepare the Ingredients

Wash the arugula, cherry tomatoes, and radishes. Slice the cherry tomatoes in half and the radishes into thin rounds. Set aside.

  2. 2

    Make the Guacamole

In a bowl, mash the avocado with a fork until smooth. Add salt and pepper to taste and mix well.

Cooking

  1. 3

    Cook the Salmon

In a pan over medium-high heat, cook the salmon fillet for about 3-4 minutes on each side until it is cooked through. Remove from heat and let it cool slightly before flaking it with a fork.

  2. 4

    Prepare the Eggs

Bring a small pot of water to a boil. Carefully add the eggs and boil for 6-7 minutes for a '10-minute egg'. Remove the eggs from the pot and place them in cold water to stop the cooking process. Once cooled, peel the eggs and set aside.

Assembly

  1. 5

    Assemble the Toast

Toast the sourdough bread slices until golden brown. Spread a generous layer of guacamole on each slice. Top with flaked salmon, arugula, cherry tomatoes, radish slices, and capers.

  2. 6

    Finish and Serve

Cut the boiled eggs in half and place them on top of the toast or serve them on the side. Drizzle with olive oil and serve with lemon wedges on the side. Season with additional salt and pepper if desired.
