    Prepare the Salmon

    Preheat the oven to 400°F (200°C). Place salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil, and season with salt and black pepper.

    Bake the Salmon

    Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork.

Almond Olive Chimichurri

    Make the Chimichurri

    In a large bowl, combine chopped parsley, cilantro, toasted almonds, olive oil, red wine vinegar, minced garlic, red pepper flakes, and salt. Mix well until all ingredients are thoroughly combined.

    Cook the Rice

    Rinse jasmine rice under cold water until the water runs clear. In a medium saucepan, combine rice, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the rice is tender and water is absorbed. Fluff with a fork before serving.

    In a large skillet, heat olive oil over medium heat. Add chopped broccoli and sliced carrots. Season with salt and black pepper. Sauté for about 5-7 minutes until vegetables are tender but still crisp.
