Method
Preparing the Potatoes

Cut and Soak
Peel and dice the potatoes into bite-sized cubes. Soak them in cold water for at least 30 minutes to remove excess starch.

Drain and Dry
After soaking, drain the potatoes and pat them dry with a clean kitchen towel.

Fry the Potatoes
In a large frying pan, heat the olive oil over medium heat. Once hot, add the potatoes in batches, ensuring not to overcrowd the pan. Fry until golden brown and crispy, about 8-10 minutes. Remove and drain on paper towels.

While the potatoes are still hot, sprinkle with paprika, salt, and pepper to taste. Toss gently to coat.
Making the Garlic Aioli

Prepare the Garlic
Mince the garlic cloves finely or use a garlic press.

Combine Ingredients
In a mixing bowl, whisk together the minced garlic, egg yolk, and lemon juice until combined.

Emulsify
Slowly drizzle in the olive oil while whisking continuously until the mixture thickens and becomes creamy.

Add salt to taste and adjust the consistency with a few drops of water if necessary.
