    Cook the Brisket

    In a large skillet, heat olive oil over medium heat. Season brisket with salt and black pepper. Sear brisket on all sides until browned, about 5-7 minutes.

    Sauté Vegetables

    Remove the brisket from the skillet and set aside. Add chopped onion and minced garlic to the same skillet; sauté until onions are translucent, about 3-4 minutes.

    Combine Ingredients

    Return brisket to the skillet. Add beef broth, chipotle peppers, cumin, and adjust salt and pepper to taste. Bring to a boil, then reduce heat to low. Cover and simmer for 2-3 hours until brisket is tender.

    Shred the Meat

    Once cooked, remove brisket from the skillet and shred with two forks. Return the shredded meat to the skillet and mix well.

Cheese Sauce Preparation

    In a saucepan over medium heat, melt butter. Stir in flour and cook for about 1-2 minutes until slightly golden.

    Gradually whisk in milk, ensuring no lumps form. Cook until mixture thickens, about 3-5 minutes.

    Remove from heat and stir in shredded cheddar and cream cheese until melted and smooth. Season with salt and black pepper.

Pie Crust Preparation

    Prepare the Dough

    In a large bowl, mix flour and salt. Cut in chilled butter until mixture resembles coarse crumbs.

    Stir in cold water, one tablespoon at a time, until dough comes together. Divide dough in half, shape into discs, wrap in plastic, and refrigerate for at least 1 hour.

Assemble and Bake

    On a floured surface, roll out one dough disc to fit a pie dish. Place it in the dish and fill with the brisket mixture.

    Roll out the second dough disc and place it over the cheese sauce. Seal the edges and cut slits for steam to escape.
