Prepare Rice

Cooking the Rice
In a medium saucepan, combine the white rice and water. Bring to a boil over high heat. Once boiling, reduce the heat to low, cover, and let simmer for 15-20 minutes or until the rice is cooked and water is absorbed. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.

Searing the Beef
While the rice is cooking, season the beef tenderloin with salt and black pepper. In a skillet, heat olive oil over medium-high heat. Add the beef tenderloin and sear for about 3-4 minutes on each side for medium-rare, or longer for desired doneness. Remove from skillet, cover, and let rest before slicing.

In the same skillet used for the beef, add the chopped onion and bell pepper. Sauté for about 5 minutes until softened. Add the diced tomatoes and cook for an additional 2-3 minutes until the tomatoes are slightly broken down. Season with salt and pepper to taste.

Prepare Spicy Soy Ginger Sauce

Mixing the Sauce
In a small bowl, combine soy sauce, minced ginger, and chili flakes. Stir well to combine.
Assemble the Dish

Serving the Lomito
On a plate, start with a bed of rice. Top with sautéed vegetables, sliced beef tenderloin, and an over-easy egg. Drizzle with the spicy soy ginger sauce. Serve immediately.
