In a large pot, heat the vegetable oil over medium heat until hot. Carefully add the frozen French fries to the oil in batches, ensuring not to overcrowd the pot. Fry until golden brown and crispy, about 5-7 minutes. Remove fries and place on a paper towel-lined plate to drain excess oil. Season with salt to taste.

Cook the Chili
In a large skillet over medium heat, add the ground pork and cook until browned, about 5-6 minutes. Drain excess fat if necessary. Add the diced onion and minced garlic, cooking until the onion becomes translucent, about 3-4 minutes. Stir in the diced Hatch green chilies, cumin powder, chili powder, salt, black pepper, and chicken broth. Bring to a simmer and cook for an additional 10-15 minutes until slightly thickened.

Make the Pico de Gallo
In a mixing bowl, combine diced tomatoes, red onion, chopped cilantro, lime juice, and salt. Mix well and let sit for 10 minutes to allow the flavors to meld.

Prepare the Cheese Sauce
In a saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 1 minute until lightly golden. Slowly add the milk while whisking continuously to avoid lumps. Cook until the mixture thickens, about 3-5 minutes. Remove from heat and stir in the shredded cheddar cheese until smooth. Season with salt to taste.

Combine Everything
On a large serving platter, layer the crispy fries. Top with the warm hatch pork chili, followed by the pico de gallo, and drizzle with the cheese sauce. Serve immediately and enjoy!
