Main Ingredients

Seasonal Vegetables

Method

Preparing the Salmon

  1. 1

    Marinate the Salmon

In a bowl, combine 4 tablespoons of olive oil, 2 tablespoons of lemon juice, 2 teaspoons of minced garlic, 1 teaspoon of salt, and 1 teaspoon of black pepper. Mix well to create a marinade.

  2. 2

    Add Salmon to Marinade

Add the salmon fillets to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes.

Preparing the Vegetables

  1. 3

    Prepare the Vegetables

While the salmon is marinating, wash and prepare the seasonal vegetables. Trim the asparagus, slice the zucchini, and slice the red bell pepper.

  2. 4

    Season the Vegetables

In a separate bowl, drizzle 2 tablespoons of olive oil over the vegetables. Sprinkle with 0.5 teaspoon of salt and 0.5 teaspoon of black pepper. Toss to coat evenly.

Grilling

  1. 5

    Preheat the Grill

Preheat your grill to medium-high heat (about 375°F or 190°C).

  2. 6

    Grill the Salmon

Remove the salmon from the marinade and place it skin-side down on the grill. Grill for about 6-8 minutes per side, or until the salmon is cooked through and flakes easily with a fork.

  3. 7

    Grill the Vegetables

Place the seasoned vegetables on the grill. Grill for about 4-5 minutes, turning occasionally, until they are tender and have grill marks.

Serving

  1. 8

    Plate and Serve

Once the salmon and vegetables are grilled, remove them from the grill. Plate the salmon alongside the grilled vegetables. Serve hot.
