Preparing Pickled Onions

    Pickling the Onions

    Thinly slice the red onion and place in a bowl. In a separate bowl, mix white vinegar, water, sugar, and salt until dissolved. Pour over the onions and let sit for at least 30 minutes.

    Frying the Potatoes

    Peel and cut the potatoes into fries. Rinse in cold water and dry thoroughly. Heat oil in a deep fryer or large pot to 180°C (350°F). Fry the potatoes in batches until golden brown and crispy, about 5-7 minutes. Drain on paper towels and sprinkle with salt.

    Preparing the Batter

    In a bowl, mix flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until smooth.

    Frying the Seafood

    Dredge each piece of seafood (mussels, calamari, shrimp, and white fish) in the batter, allowing excess to drip off. Fry in hot oil (180°C or 350°F) in batches until golden brown, about 3-4 minutes for each type. Remove and drain on paper towels.

    Arrange the fried seafood, house fries, and pickled onions on a large platter. Serve with tartar sauce and chipotle crema on the side.
