Fried Chicken

Marinate the Chicken
In a large bowl, combine the chicken pieces and buttermilk. Let it marinate for at least 2 hours or overnight in the refrigerator.

Prepare the Coating
In another bowl, mix the flour, paprika, garlic powder, onion powder, salt, and black pepper together.

Coat the Chicken
Remove the chicken from the buttermilk and let the excess drip off. Dredge the chicken pieces in the flour mixture until well coated.

Fry the Chicken
In a large skillet, heat the cooking oil over medium-high heat. Once hot, add the coated chicken pieces and fry for about 15-20 minutes, turning occasionally until golden brown and cooked through.

Cook the Chorizo
In a skillet over medium heat, cook the chorizo sausage until browned and fully cooked, breaking it apart with a spoon.

Combine Ingredients
Add the cream cheese, shredded cheddar cheese, milk, and diced tomatoes with green chilies to the skillet. Stir continuously until the cheese has melted and the mixture is smooth.

Prepare the Potatoes
Preheat the oven to 400°F (200°C). Wash and peel the potatoes, then cut them into wedges.

Season and Roast
In a bowl, toss the potato wedges with olive oil, salt, black pepper, and paprika. Spread them out on a baking sheet and roast in the oven for 25-30 minutes until golden and crispy.

Cook the Eggs
In a non-stick skillet, melt the butter over medium heat. Crack the eggs into the skillet and cook until the whites are set, about 2-3 minutes.

Carefully flip the eggs and cook for another 1-2 minutes. Season with salt and black pepper to taste.
