Flamed Salmon

    Prepare the Salmon

    In a bowl, combine the olive oil, salt, black pepper, lemon juice, and cayenne pepper. Mix well.

    Marinate the Salmon

    Coat the salmon fillets with the marinade and let them sit for at least 30 minutes.

    Prepare for Smoking

    Soak the wood chips in water for about 30 minutes before using.

    Flame the Salmon

    Preheat your grill. Once hot, place the soaked wood chips on the coals or in a smoker box. Cook the salmon on the grill for about 6-8 minutes on each side, or until cooked through and slightly charred.

Guacamole

    Prepare the Avocados

    Cut the avocados in half, remove the pit, and scoop the flesh into a bowl.

    Mash the Avocados

    Add lime juice, minced garlic, and salt to the avocados. Mash with a fork until smooth or to your desired consistency.
