    Prepare the Filet

    Season the filet mignon pieces with salt and black pepper on both sides.

    Sear the Filet

    Heat olive oil in a skillet over medium-high heat. Once hot, add the seasoned filets and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved.

    Rest the Filet

    Remove the filets from the skillet and let them rest on a plate, covered with foil, for about 5 minutes.

Malbec Jus

    Sauté Shallots

    In the same skillet used for the filets, add the finely chopped shallots and sauté for about 2-3 minutes until softened.

    Deglaze with Malbec

    Pour in the Malbec wine and bring to a boil, scraping up any browned bits from the bottom of the skillet. Reduce by half, about 3-4 minutes.

    Add Beef Stock

    Add the beef stock and fresh thyme, and simmer for an additional 5-7 minutes until the sauce thickens slightly.

    Finish with Butter

    Remove the jus from heat and whisk in the butter until melted and the sauce is glossy.

    Prepare Garlic Mashed Potatoes

    Boil peeled and chopped potatoes in salted water until tender, about 15-20 minutes. Drain and mash with garlic, butter, milk, salt, and pepper to taste.

    Steam Asparagus

    Trim the asparagus ends and steam until bright green and tender, about 3-5 minutes.
