Prepare the Spinach
Wash the fresh spinach thoroughly under cold water. Drain and set aside.

Add Cream and Seasonings
Pour in the heavy cream and add nutmeg, salt, and black pepper. Stir well to combine and let simmer for 5 minutes, allowing the flavors to meld.

Blend the Mixture
Using an immersion blender, blend the mixture until smooth. If you don’t have an immersion blender, carefully transfer the mixture to a regular blender and blend until smooth, then return to the saucepan.
Poblano Corn

Roast the Poblano Peppers
Preheat the oven to 400°F (200°C). Place the poblano peppers on a baking sheet and roast for 20-25 minutes, turning occasionally, until the skin is charred. Remove from the oven, cool, and chop.

Combine Ingredients
Add the chopped roasted poblano peppers, lime juice, cilantro, salt, and black pepper to the corn. Stir well to combine and cook for an additional 2-3 minutes.
