    Clean the Clams

    Rinse the clams under cold water to remove any sand or debris. Soak them in fresh water for about 30 minutes to help purge any remaining sand.

    Prepare the Chorizo

    Slice the chorizo sausage into thin rounds. Set aside.

    Chop the Parsley

    Finely chop the fresh parsley and set aside for garnish.

Cooking

    Cook the Chorizo

    In a large skillet, heat the olive oil over medium heat. Add the sliced chorizo and cook until it is browned and has released its oils, about 5-7 minutes.

    Add the Clams

    Add the cleaned clams to the skillet with the chorizo. Stir gently to combine.

    Pour in the Cava

    Pour the cava (or dry white wine) over the clams and chorizo. Bring to a simmer.

    Add Garlic Herb Butter

    Once the mixture is simmering, add the garlic herb butter. Stir until melted and combined. Cover the skillet and cook for 5-7 minutes, or until the clams have opened.

    Finish with Garnish

    Remove the skillet from heat. Discard any clams that did not open. Sprinkle the chopped parsley over the dish and serve with lemon wedges on the side.
