Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C) to ensure it reaches the right temperature for baking the cakes.

  2. 2

    Prepare Ramekins

Grease four 6-ounce ramekins with butter and dust with flour or cocoa powder. This will help the cakes release easily after baking.

Batter Preparation

  1. 3

    Melt Chocolate and Butter

In a microwave-safe bowl, combine the semisweet chocolate and unsalted butter. Microwave in 30-second intervals, stirring in between, until melted and smooth.

  2. 4

    Add Sugar and Eggs

Stir in the granulated sugar until well combined. Add the eggs and egg yolks, mixing until fully incorporated.

  3. 5

    Incorporate Dry Ingredients

Sift in the all-purpose flour, and add the pinch of salt and vanilla extract. Mix until just combined; do not overmix.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 2/3 full.

  2. 7

    Bake

Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  3. 8

    Cool and Serve

Remove from the oven and let the cakes cool for 1 minute. Carefully invert each ramekin onto a plate to release the cakes. Serve warm, dusted with powdered sugar and topped with vanilla ice cream and fresh berries if desired.
