Chicken Tinga Preparation

    Cook the Chicken

    In a large pot, bring the chicken broth to a boil. Add the chicken breasts and cook for about 20 minutes or until fully cooked. Remove the chicken from the pot and shred it using two forks.

    Prepare the Sauce

    In the same pot, sauté chopped onion and minced garlic until translucent. Add the chipotle peppers and sauté for another minute.

    Combine Chicken and Sauce

    Add the shredded chicken back into the pot and stir to combine. Allow the mixture to simmer for another 10 minutes, letting the flavors meld.

Cabbage Slaw Preparation

    Shred the Vegetables

    Thinly slice the cabbage and grate the carrot. In a bowl, combine the cabbage, carrot, chopped cilantro, lime juice, and salt.

    Toss the vegetables until well combined. Adjust seasoning with more salt or lime juice to taste.

Assemble the Tacos

    In a skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

    Place a generous amount of the chicken tinga mixture into each tortilla, followed by a handful of cabbage slaw.
