Chicken Tinga

Add Chicken and Spices
Add the boneless chicken thighs, chipotle peppers, diced tomatoes, chicken broth, salt, and pepper. Stir to combine.

Simmer
Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, until chicken is cooked through.

Rinse Rice
Rinse the long-grain rice under cold water until the water runs clear.

Cook Rice
In a medium saucepan, bring 2 cups of water and 1 tsp of salt to a boil. Add the rinsed rice, stir, cover, and reduce heat to low. Cook for 18-20 minutes or until water is absorbed and rice is fluffy.
Beans

Heat Beans
In a small saucepan, combine canned black beans with cumin and a pinch of salt. Heat over medium heat until warmed through, about 5-7 minutes.
Cheese Sauce

Add Milk
Gradually whisk in the milk, stirring continuously until the mixture is smooth and thickened, about 3-5 minutes.

Add Cheese
Remove from heat and stir in the shredded cheddar cheese until melted. Season with salt to taste.
Pico de Gallo

Combine Ingredients
In a bowl, combine diced tomatoes, finely chopped onion, chopped cilantro, lime juice, and salt. Mix well and let sit for at least 10 minutes to allow flavors to meld.
