Method
Main Preparation
- 1
Grill the Chicken
Preheat the grill to medium-high heat. Season the chicken breasts with salt and black pepper, then brush with vegetable oil. Grill the chicken for 6-7 minutes on each side or until fully cooked and internal temperature reaches 75°C (165°F). Remove from the grill and let rest for 5 minutes before slicing.
- 2
Cook the Chorizo
In a skillet over medium heat, crumble the chorizo sausage and cook for about 5-7 minutes until browned and fully cooked. Drain excess fat if necessary and set aside.
Queso Preparation
- 3
Make the Queso
In a saucepan over low heat, combine cream cheese, shredded cheddar cheese, and milk. Stir continuously until the cheeses are melted and the mixture is smooth. Add chopped cilantro and mix well. Remove from heat.
Fried Jalapenos Preparation
- 4
Prepare the Jalapenos
Slice the jalapenos into rings. In a mixing bowl, combine flour, cornmeal, and water to create a batter. Dip each jalapeno ring into the batter, allowing excess to drip off.
- 5
Fry the Jalapenos
Heat oil in a deep frying pan over medium-high heat. Once the oil is hot, carefully add the battered jalapenos in batches and fry for 3-4 minutes until golden brown. Remove with a slotted spoon and drain on paper towels.
Cooking the Sides
- 6
Cook the Sides
If using frozen fries, cook according to package instructions. If using rice, boil according to package instructions until tender. Serve as a side to the grilled chicken and queso.
