    Clean the Oysters

    Rinse the fresh oysters under cold running water to remove any dirt or debris. Using a scrub brush, gently scrub the shells to ensure they are clean.

    Preheat the Grill

    Prepare your grill for high heat, around 450°F (232°C). If using a charcoal grill, ensure the coals are evenly distributed for consistent heat.

Making Cotija Garlic Butter

    Melt the Butter

    In a small saucepan over low heat, melt the unsalted butter. Do not let it boil.

    Add Garlic

    Once the butter is melted, add the minced garlic cloves and sauté for about 2 minutes until fragrant, being careful not to burn the garlic.

    Mix in Cotija Cheese

    Remove the saucepan from heat and stir in the crumbled cotija cheese until well combined.

    Add Parsley and Seasonings

    Mix in the chopped parsley, lemon juice, salt, and black pepper until everything is evenly distributed. Set aside.

Grilling Oysters

    Prepare the Oysters

    Carefully open each oyster using an oyster knife. Discard any broken shells and keep the oyster in the deeper half of the shell.

    Add Cotija Garlic Butter

    Spoon a generous amount of the cotija garlic butter mixture onto each opened oyster.

    Grill the Oysters

    Place the oysters on the grill over direct heat. Close the grill lid and cook for about 5-7 minutes or until the oysters are cooked through and the butter is bubbly.

    Serve

    Remove the oysters from the grill using tongs. Serve immediately, garnished with additional parsley or lemon wedges if desired.
