Method

Preparing the Tomatoes

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Prepare the Tomatoes

    Slice the Roma tomatoes in half lengthwise. Drizzle with olive oil, and sprinkle salt and black pepper on top.

    Grill the Tomatoes

    Place the tomatoes cut side down on the grill. Grill for about 5-7 minutes until they are charred and starting to caramelize.

    Remove from Grill

    Carefully remove the tomatoes from the grill and set aside to cool.

Making the Chimichurri Sauce

    Chop the Herbs

    Finely chop the fresh parsley and cilantro and place them in a mixing bowl.

    Add Garlic

    Mince the garlic cloves and add them to the bowl with the herbs.

    Combine Ingredients

    Add the red wine vinegar, olive oil, red pepper flakes, salt, and black pepper to the herb mixture.

    Mix Well

    Stir all the ingredients together until well combined. Adjust seasoning to taste.

Serving

    Plate the Dish

    Serve the grilled tomatoes on a platter and drizzle generously with the chimichurri sauce.

    Garnish

    Optionally, garnish with additional fresh herbs or a sprinkle of feta cheese.
