    Chop the Vegetables

    Dice the bell peppers, onion, and tomatoes into small pieces. Slice the mushrooms.

    Prepare the Brisket

    If the barbacoa brisket is not already shredded, shred it into bite-sized pieces.

Cooking

    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the diced bell peppers and onion. Sauté for about 5 minutes until they start to soften.

    Add the Mushrooms and Tomatoes

    Add the sliced mushrooms and diced tomatoes to the skillet. Cook for an additional 3-4 minutes, stirring occasionally.

    Incorporate the Brisket

    Add the shredded barbacoa brisket to the skillet. Season with salt and black pepper. Stir to combine and cook for another 5 minutes until heated through.

    Cook the Eggs

    In a separate non-stick skillet, heat a small amount of olive oil over medium heat. Crack the eggs into the skillet, cooking them until the whites are set but the yolks are still runny, about 3-4 minutes.

Plating
