Prepare Brisket Al Pastor

    Marinate the Brisket

    In a large bowl, combine pineapple juice, white vinegar, adobo sauce, minced garlic, oregano, cumin, salt, and black pepper. Mix well. Place the brisket in a resealable bag or shallow dish, pour the marinade over it, seal, and refrigerate for at least 4 hours or overnight for best results.

    Cook the Brisket

    Preheat your oven to 300°F (150°C). Remove the brisket from the marinade and pat it dry. Heat olive oil in a large skillet over medium-high heat. Sear the brisket on both sides until browned, about 4-5 minutes per side. Transfer the brisket to a baking dish, cover with foil, and bake for 3-4 hours, or until tender.

    Rest and Slice

    Once cooked, remove the brisket from the oven and let it rest for 20 minutes. Slice thinly against the grain.

    Mix Slaw Ingredients

    In a large bowl, shred the green cabbage and grate the carrot. Add lime juice, coriander, salt, and black pepper. Toss to combine and set aside to allow the flavors to meld.

Assemble Tacos

    Warm Tortillas

    Heat the corn tortillas on a hot skillet for about 30 seconds on each side until warm and pliable.

    Build the Tacos

    Place a few slices of brisket on each tortilla, top with cabbage slaw, fresh cilantro, and sliced radishes. Drizzle sour cream over the top if desired. Serve immediately.
